Hand harvested on 27 February 2024 the grapes were de-stemmed and chilled overnight before pressing to oak the following morning. Over the following few days, natural “wild” yeasts initiated fermentation which took place in seasoned oak barriques where the wine spent the following eleven months before bottling in January 2025.
Approximately 20% of barrels experienced, secondary malolactic fermentation.
Wine Characteristics: Bright, fresh and lively this Chardonnay whilst on the lighter side has good flavour intensity and mouthwatering acidity that provides length to a mineral infused palate where pear, citrus and light nectarine characters are discernible.
